Pan Seared Salmon with Rosemary and Lemon, do we really have to say anything more? This is seriously one of the easiest recipes we have shared, yet one of the most delicious. Not to mention your home will smell amazing during the process (thank you, rosemary)!

Pan Searing Salmon

Searing salmon is a very tasty and easy way to cook it. Think – crispy on the outside and soft, flaky and tender on the inside. YUM!

If you aren’t familiar with searing – it is a technique used where you cook food at a high temperature, in order to create a crispy texture on the outside. Cooking salmon this way is SUPER easy!

While you can use any pan, we do recommend a well seasoned cast iron or a non-stick pan! Using these will give you the best results.

Steps to Follow

Before searing your salmon, take the skin-off if your salmon has skin. Although you could leave the skin on, we prefer this recipe with the skin off so that both sides of the salmon get nice and crispy. Pro tip: if you are a dog owner, cook the skin separately in the oven to crisp it up and feed it to your pup! No waste and a happy dog…you can’t go wrong.

Next, pat dry the salmon and lightly coat it with a flour, salt and pepper mixture. This will assist getting the salmon nice and crispy on the outside.

Heat oil in a cast iron or non-stick pan over high-medium heat. The trick to searing is to not use too much oil and get it very hot before adding the salmon. You also want to use an oil with a high smoke point – we recommend avocado, vegetable or sunflower seed oil.

Add your salmon to the pan. Because we took the skin off, this doesn’t matter too much, but we generally put the “skin-side” down first. Sear the salmon for 3-4 minutes – depending on the size of your fillet.

Flip the salmon and begin to add the other ingredients – salt, lemon, butter and rosemary. After about a minute on the flipped side, turn the temperature down to medium/low temp. This will ensure the inside of the salmon gets cooked too!

After adding the butter, lemon and rosemary, begin basting your salmon. Essentially, start pouring the melted butter over the salmon to allow the flavours to penetrate the salmon! We just use a spoon for this, nothing fancy!

This other side should again take 3-4 minutes depending on the thickness of your salmon. REMEMBER – salmon does NOT have to be cooked all the way through. It can still be a little translucent-pink in the middle, this is based on preference though, very similar to steak!

Okay, our final tip for this recipe is to use fresh salmon. Now, if you have frozen salmon you can still use it, but the fresher the salmon the better the flavour for this recipe.

Ingredients
  

  • 12 ounce salmon fillet, skin-off, cut into 4 pieces, or desired amount
  • ¼ cup flour
  • 1 tbsp avocado oil, vegetable or sunflower seed oil works too
  • 3 tbsp butter
  • ½ lemon, juiced
  • 4 sprigs fresh rosemary
  • salt and pepper

Instructions
 

  • Take skin off salmon, pat dry.
  • On a plate, mix together flour and salt + pepper.
  • Coat salmon with flour mixture and place to the side.
  • Heat up oil in a non-stick pan at medium-high heat.
  • Once hot, place salmon pieces in the pan and sear for 3-4 minutes, depending on thickness of salmon fillets.
  • Flip salmon and lightly season with salt, then squeeze lemon over fillets. Add in butter and rosemary.
  • Lower the temperature to medium-low heat and once the butter has melted, begin basting the salmon with the lemon butter mixture.
  • Cook for another 3-4 minutes.
  • Serve immediately and enjoy!
