Light, easy and oh so delicious, this summery side dish is one of the best ways to eat your fresh tomatoes, especially right now when tomatoes are at their peak! This dish is inspired by the classic Italian Caprese salad, and with just a few ingredients, the simplicity is what makes it so great.

One of our favourite weekend activities in the summer is to head to our local farmers market, and this past weekend we picked up the most beautiful, fresh and flavourful Ontario tomatoes. Which means this recipe will be used plenty in our homes this week and there will be NO complaints about it, because it is so tasty.

We love salads, however, sometimes the prep of all of the toppings is daunting, which is why this recipe is something you can turn to if you still want to eat fresh, raw veggies with minimal preparation! This dish is so easy to throw together in less than 10 minutes.

Simple Summer Caprese Salad Tips 

  1. Use QUALITY mozzarella cheese. This is important! Make sure your mozzarella cheese has lots of flavour! 
  2. Use good quality olive oil and balsamic vinegar.
  3. And last but definitely not least, FRESH BASIL. The basil completes this recipe and brings everything together.

Caprese salad doesn’t have that many ingredient, but moral of the story – the few ingredients it does have need to be good quality and fresh!

Ingredients
  

  • 8 Tomato slices approximately 2 large tomatoes
  • 8 Mozzarella cheese slices
  • Fresh basil chopped
  • Olive oil
  • Balsamic glaze
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Slice the tomatoes and place on a platter.
  • Sprinkle salt and pepper over the tomatoes.
  • Add a slice of mozzarella cheese on top of each tomato.
  • Next, sprinkle the chopped basil over the cheese.
  • Drizzle both the olive oil and balsamic glaze evenly over all of the tomatoes.
